2 Tablespoons instant coffee granules
3 Tablespoons coffee flavored liqueur
1/2 Cup butter, softened
1 teaspoon vanilla extract
1/4 teaspoon salt
4 Cups Confectioners sugar
16 oz white chocolate

Dissolve coffee granules in liqueur. In a large bowl, beat butter, vanilla and salt until fluffy. Add the dissolved coffee mixture to the butter mixture and beat until blended. Next add 3 and 3/4 cups confectioners sugar and stir until smooth. Shape mixture into 1″ balls. Roll balls in remaining 1/4 cup confectioners sugar. Place balls on a baking sheet lined with waxed paper. Freeze for 1 hour
Melt White Chocolate with small amount of paraffin( adds crunch to the coating) over low heat. Remove 6 balls at a time from the freezer and dip into white chocolate coating, return to a second waxed paper lined sheet and let stand about 10 minutes or until coating hardens.
Store in an airtight container in refrigerator.
