4 cups of water

1 cup of sugar

1 tablespoon of grated lemon zest

3/4 cup of fresh lemon juice


Bring water to a boil, then add the sugar and stir until dissolved. Let the mixture cool down, then add lemon zest and juice and stir to combine.

Pour mixture into a baking pan and place in freezer. Stir every 20 minutes or so and leave until all of the liquid is crystallized but not completely frozen.  After about 3 hours your Italian Ice should by smooth and ready.
